I love pineapple when it is in season. It has that perfect combination of sweet and tangy. The problem with pineapple is that there is such a short window of when it is in my price range. I like to pay about $.79-$.99 per pineapple. So when I saw a great price on pineapples I picked some up and made some dried pineapple chips. They are easy to make and are a great snack for summer.
I used my food dehydrator, but you can also use your oven. Start by cutting the top off of the pineapple and discard the top.
You will then want to start cutting off the sides of the pineapple. Don’t go so deep that you remove the eyes of the pineapple. The fruit right under the skin is where it is the sweetest.
Once you have removed all the skin you can start working on the eyes. Usually you will find the eyes make a spiral pattern around the pineapple. You can easily cut away a line and remove the eyes without removing much of the fruit. I use a V pattern to remove the eyes.
Once you have all the eyes removed you can cut the pineapple into slices. I sliced them to be about 1/4 inches.
I removed the center of the pineapple slices. They can often be very tough and chewy. To remove the center I just used a small biscuit cutter. It easily sliced right through the pineapple and I could discard the center.
Once I was finished cutting and removing the center I placed them on the trays of my food dehydrator and set it to 135 degrees. If you don't have a food dehydrator you can place them on parchment paper in the oven at 200 degrees.
It took about 8 hours for them to get good and crispy, it will take less time if you make them in the oven. You will know they are done when you can easily break one.
You can store them in an airtight container. They are so sweet and yummy, it's almost like eating candy. These never last long in my house! These are a perfect treat to snack on during the summer.
